Kapsalon (Dutch for barbershop) is thought to have originated in Rotterdam about 2003 when a barber visited a neighboring fast food restaurant and ordered a meal of French fries and shawarma. The production of kapsalon begins with making potato fries. The fries are lightly salted and placed at the bottom of a disposable metal food container. The fries are then topped with a layer of shawarma meat.

Shawarma is a Middle Eastern dish typically cooked with seasoned lamb or beef meat. Shawarma is usually roasted on metal skewers that rotate vertically. The cheese should then be added, preferably true Dutch Gouda cheese with a high-fat content, and roasted for a brief while in the oven to melt it over the fries and meat. Finally, fresh veggies including lettuce, tomatoes, cucumbers, and onions are added and a sauce is drizzled over the entire dish. Take a bite off of the fries and combine them with the cheese, meat, and veggies for a real taste experience.
