(For 3 Servings)

For Grilled /Sautéed Vegetables

  • A quarter cup of chopped broccoli
  • A quarter cup of chopped bell paper (any color)
  • A quarter cup of half-cut green beans
  • 1 medium-sized onion cut into half
  • 1 piece of small-cut baby corn
  • Salt to taste
  • A pinch of freshly ground black pepper
  • 2 tbsp. of melted butter

For Sautéed Meat

  • Half a pound of chopped boneless chicken (preferably chicken breast meat)
  • Half a teaspoon of ginger paste
  • Half a teaspoon of garlic paste
  • A pinch of ground black pepper
  • A pinch of hot paprika
  • Salt to taste
  • 1 tablespoon of butter

For Fresh Vegetable Mix

  • Half a cup of cut cherry tomatoes
  • Half a cup of fresh lettuce
  • Half a cup of chopped cucumber
  • Half a cup of chopped green apple
  • Half a cup of chopped avocado

For Salad Dressing:

  • 2 tablespoons of olive oil
  • Half a cup of Greek yogurt
  • 1 medium lime juice
  • Half a tbsp. of lime zest
  • Pinch of ground black pepper
  • 1 tbsp. of powdered sugar (optional)

Instructions:

  • In a medium dish, add all the spices and boneless chicken, mix them well, and cover for 30 minutes.
  • Firstly make the sautéed chicken, take a frying pan on a high flame brush the butter put the chicken pieces, and sauté them well. Set aside.
  • Take a large dish and take all the vegetables that you cut for sautéing and mix with a pinch of ground black pepper.
  • Take the grilling tray put the vegetables sprinkle the salt put the tray in the preheated oven and grill the vegetables for 35 to 40 minutes at 400-425°F (200-220°C) and keep aside.
  • In a small pot, mix all the ingredients of the dressing except the yogurt well. After mixing them, add the yogurt and mix smoothly.
  • In a large dish put all the chopped fresh vegetables and the sautéed chicken (just keep some piece of chicken for garnishing). Pour the salad dressing and give a gentle mix.
  • Now take a fancy serving dish put the salad mixture, top it with the grilled vegetables, and garnish with the rest of the chicken pieces.
