Semolina Pineapple Pie Recipe| Tangy & Delicious Pie
Using semolina, which is frequently used in Indian cooking, raw pineapple, and sugar for sweetness, I made a silky and creamy dessert. I used caramelized pineapple as decoration. Typically from Egypt or Greece, pies are sweet dishes distinguished by their crunchy crust and creamy inside.
I took a variation on it, though, by incorporating a creamy texture and a touch of tartness. The one who enjoyed this dish the most was my grandfather, who likes pies but finds it difficult to consume crunchy foods.
Ingredients:
- 2 tbsp. unsalted butter
- 1 cup of semolina
- 1 cup of sugar
- 1 cup of fresh pineapple paste
- 2 cups of water
- Pinch of salt
- 2 tbsp. chopped pistachios
- 2 tbsp. chopped cashew nut or almond
- Dried caramelized pineapple slices (For garnishing)
- 2 tbsp. sugar (For caramel)
- Half tsp. water (For caramel)
Instructions:
- In a large saucepan, melt butter over medium-low heat.
- Add the semolina & toss for 2 minutes & keep stirring.
- Add the water, pineapple paste, sugar & salt and keep mixing.
- When the mixture gets thick add the dry fruits & mixed well.
- When you feel that you can set & the mixture as a cake stop cooking.
- Now brush some melted butter & set the mixture in a square-shaped dish.
- Let it get some rest for 20 minutes.
Caramelized Pineapple Making:
- To create the caramel in the meantime, take a small pan and pour 2 tablespoons of sugar & half tsp. water on high flame. And keep stirring.
- The sugar will melt and turn caramelized after a while.
- Turn off the burner after making the caramel.
- Slices of dried pineapple should be added and coated with caramel. When the caramel is soft and warmed.
- To set the caramel, use a plain platter and keep the pineapple slices apart.
Time to Cut Pie:
- Slice the semolina pineapple pie dish into the desired shapes.
- To decorate the semolina pineapple pie, add slices of caramelized pineapple on top & it tastes also good.
- Before serving keep it in the refrigerator for at least 1 hour.
- Enjoy your delicious semolina pineapple pie.
Take Note:
- If you’d like, you can add more sugar.
- Stir continuously to avoid burning.
