Semolina Pineapple Pie Recipe| Tangy & Delicious Pie

Using semolina, which is frequently used in Indian cooking, raw pineapple, and sugar for sweetness, I made a silky and creamy dessert. I used caramelized pineapple as decoration. Typically from Egypt or Greece, pies are sweet dishes distinguished by their crunchy crust and creamy inside.
I took a variation on it, though, by incorporating a creamy texture and a touch of tartness. The one who enjoyed this dish the most was my grandfather, who likes pies but finds it difficult to consume crunchy foods.

Ingredients:

  • 2 tbsp. unsalted butter
  • 1 cup of semolina
  • 1 cup of sugar
  • 1 cup of fresh pineapple paste
  • 2 cups of water
  • Pinch of salt
  • 2 tbsp. chopped pistachios
  • 2 tbsp. chopped cashew nut or almond
  • Dried caramelized pineapple slices (For garnishing)
  • 2 tbsp. sugar (For caramel)
  • Half tsp. water (For caramel)
